So last week I did pretty well. We went 10 nights in a row with home cooked meals. I am finding it really therapeutic to some of the stresses in life right now.
I figured out what I think might have been part of the issue in getting it on the table but the true test will be next week when school begins. The issue I think was planning and getting the grocery shopping done first thing on Saturday. I would usually go after work a few times a week that I just dreaded or would leave it till Sunday night and again it just didn’t happen. So far so good and the fridge is packed with good stuff for the week.
Here is a summary of last week with recipes and the highlights!
Sunday- Creamy Parmesan Tomato Soup with turkey burgers…was supposed to be grilled cheese but TB accidentally took out the wrong burgers Sat night so we had to substitute. This soup was in the slow cooker all day and was amazing!!! We actually are going to have the rest of it this week with grilled cheese! From 365 days of slow cooking, recipe: http://www.the-girl-who-ate-everything.com/2012/10/slow-cooker-tomato-basil-parmesan-soup.html
Monday- Bowtie chicken ceasar salad from the Girl Who Ate Everything. Recipe: http://www.the-girl-who-ate-everything.com/2010/04/bowtie-chicken-caesar-salad.html. It was quite yummy and TB and I both enjoyed a little switch up by adding the pasta to the salad.
Tuesday- Skinny Turkey Ranch Club…another winner just would switch out the american cheese for cheddar cheese, but we had the american in the fridge for the grilled cheeses. From Skinny Moms Kitchen recipe: http://www.skinnymomskitchen.com/2012/01/30/turkey-ranch-club-wrap/
Wednesday- I had dinner on the menu but our neighbor surprised us with some home cooking that she had left over. It was delicious!
Thursday- I made honey lime skewers with rice. The marinate was amazing and TB said it might be the best chicken he has every had. We will be doing this one again soon! From Kitchen meets girl, recipe: http://kitchenmeetsgirl.com/main-dishes/honey-lime-chicken-skewers/
Friday night we went out for Wings. TB and I both had a craving and the new BW3 opened up so we had an excuse.
Saturday night was MB’s first night home and her choice! Steak. Salmon. Rice. Asparagus with some Ghirradeli chocolate cookies made for desert. Really can’t go wrong with that. I did wrap some of the asparagus in proscuitto since we had some left over from the meal I didn’t make on Wed.
All in all no “bad meals” this week!
Hope I can keep it up this week!
